Okay boos and ghouls! Here is a fun one for your Halloween party that is both KETO and low-carb. But grossly appetizing! Bwahahaha
6 Large Eggs
2 Tablespoons Mayonnaise
1 Tablespoon Brown Mustard
2 Drops Red Food Color
12 Medium Olives With Pimentos
3 Slices White Bread
Salt & Pepper to taste
Preheat oven to 350 degrees. Place the eggs in a pot of cool water and bring them to a boil for 20 minutes. Then place them in ice water for 2 - 5 minutes to stop them from cooking. Peel them one by one.
Slice each egg through the center and carefully remove the yolks. Place the yolks in a mesh strainer over a bowl and use a spoon to push the yolks through. This turns the yolks into a powder that makes for a creamier, less chunky filling.
Add the mayonnaise, mustard and salt and pepper. If it is a little dry add a bit more mayonnaise until it is the consistency of a thick hummus. Add the food color to get the spooky red color you desire. Cover with plastic wrap to keep from drying out.
Use a tiny cookie cutter about the size of the eggs. Cut 12 circles out of the bread. Flatten them as much as you can and toast them in the oven on a baking sheet for 5 - 7 minutes until lightly browned.
Use a standard pastry-piping tip to cut an olive-sized hole through the top of the egg. Cut the egg piece from the hole in half and push back into the hole. This will keep the half-inch sized olive you push into the hole in place.
Carefully turn the eggs over and fill, making sure not to over fill. Place your thin bread toast on top to seal it. Flip it over and repeat for the others.
**** Extra Creepy Note **** Use a straw to cut small rounds out of black olives. Remove the pimentos from the olives and replace with the black olive "pupil". Also you can use a toothpick dipped in red food color to draw veins on the eggs!
