Elegant But Easy Peasy Apple Rose Pies

This recipe is so easy, even a beginner can do it! And it is so elegant that it would appear that you had a pastry chef make them!

2 Sheets Puff Pastry

3 Apples (deep red color)

1 Tbl Lemon Juice

3 Tbl Jam of choice

1 Tbl Water

           Preheat your oven to 375 degrees. Spray a muffin tin VERY well as these will stick. Wash the apples, cut in half and remove the core. Thinly slice the apples leaving the skin on. Place the apple slices in a microwave safe bowl with the lemon juice and just enough water to cover them. Microwave on high for 8 minutes. Drain and pat dry.

            Slightly roll out the pastry working with one sheet at a time. Cut into 6 strips along the short edge. Mix the jam and water in a bowl and microwave for 30 seconds. Spread some of the jam on the top edge of the pastry strip. Arrange apple slices overlapping on top of the jam with the skin facing outside the pastry. Fold lower half of the pastry over the top of the apples then roll from end to end. Place in the muffin tin the continue with the remaining pastry to make 12 apple pies. Make for 40 minutes or until golden brown. Let cool 5 minutes before removing from the pan.
